Sowing instructions:   Sow outdoors in a well prepared seed bed after all danger of frost is past in a nice sunny spot. Sow 4 to 5 seeds per hill in rows 12 inches apart. Water well. Optimum soil temperature is 60+ degrees F.  If starting indoors, use individual peat pots to minimize root disturbance when transplanting and start them mid-April to early May. Transplant 3 weeks after seeding. 

Plant Care: For the biggest yields place plants in raised composted beds.  Water regularly. Side dress as necessary with a  rich compost or fertilizer.

Pumpkin Pie

makes one 9 inch pie
Ingredients

  • 2 cups cooked pumpkins
  • 3 egg whites
  • 1/2 cup honey or maple syrup
  • 1 1/2 cup evaporated milk or low fat milk
  • 1  teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 9-inch unbaked pie crust

Preheat the oven to 425 degrees F. Put all ingredients in bowl and mix until until smooth. Pour into 9-inch unbaked pie crust and bake for 15 minutes at 425 F. Reduce temperature to 350 F and bake another 45 minutes or until set. Cool and serve with your favorite topping.
