Sowing instructions:   Sow indoors 6 - 8 weeks before last frost.  Harden off and set out after all danger of frost is past in a nice sunny spot.  Space plants 12 inches apart  in rows 12 inches apart. Water well. Optimum soil temperature is 80+ degrees F for germination.

Plant Care: For the biggest yields place plants in raised composted beds.  Water regularly.  

Growing Tips:

  • Keep plants well watered
  • Plants will fruit as long as nighttime temperatures are above 60 degrees F
  • Maximize production by harvesting fruits regularly
  • Best when grown in rich organic soil
  • Seed can be sown indoors 3 weeks before last frost date
  • Sow outdoors after last frost and when soil temperature reaches at least 65°
  • Grow in full sun

Fun Facts:

  • The eggplant is native to southern India
  • 16th century Spaniards called them "fruits or apples of love" believing them to have love potion properties
  • Early Chinese records indicate that the eggplant was being cultivated as early as the 5th century
  • In Japan today it is one of the most important vegetables grown
Eggplant Fingers
 
Ingredients:
  • Several Little Fingers Eggplant
  • Seasoned bread crumbs  two-thirds cup
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery salt
  • Pinch of pepper
  • 1/3 cup grated parmesan cheese
  • Two eggs   
  • Two tablespoons milk
  • Olive oil
  1.  Peel the eggplants and cut into finger sized strips
  2. Combine the bread crumbs, salt, pepper, celery salt, parmesan cheese
  3. Beat the eggs in separate dish and add the milk
  4. Dip the strips into the egg mix and then roll in the bread crumb mix
  5. Fry in olive oil on the stove about 350 degrees
  6. Drain or blot with a paper towel
  7. Serve with salsa or you own homemade ranch dip
